Take a color picture take it into photoshop go to image>adjustment>gradient map and choose the black to white gradient. It makes a huge diffrence Desaturated  Gradient Mapped

I would have to say that depends on the mood or noise of the picture..
I'd choose the desaturated if I wanted to make the picture look more.. oldish type. You know what Im saying...
Well Im no pro, nor do I do these stuffs, just posting my opinion..
