I agree completely with anat about the fonts, however, a touch that i like to use unless really lazy, is to type something out in arial, then choose Layer > Type > Create Work Path. This changes your writing into a path which means if you use the direct selection tool then u can drag a box around parts of ur path, and when u have finished u simply make a new layer then click on the path and choose create selection at the bottom, then fill the text in with ur chosen colour.
